So after all it seems that i got it right, didn't i ? Changing the red cluster with a white one...
First of all, if you don't have the right tools you can't do it yourself. It doesn't work with commander, because the white cluster has a different immo type. Red cluster is immo IV, white is immo IVc ("c" is from "challange"). That means that the PIN code of the immo changes everytime you interrogate the module.
So i suggest to do the operation the "easy way": immo off. It has been done before, maybe you can contact this guy directly (he is from Spain)

Even so, the easy way is not that easy. You still need to change the ABS / ESP module in your 2005 Toledo 5P. Because the old one won't communicate with the new cluster. Even the ABS / ESP will work, the ABS / ESP pictograme in the cluster will stay permanently on and the buzzer in the cluster will bing continuously. Bing, bing, bing. It's like when you drive without the seatbelt on, except the bing won't stop. Mindfuck.
Wait, that's not it.. When changing the ESP unit, you need to change the connector and rewire it. And in your 2005 Toledo you need to change two of the brake lines (there are different fittments). And you need another bracket for the ESP unit, etc etc
I won't even go into details abot "the hard way"
Different transponders in keys, some serious hardware and in-depth knowledge. Plus all about the ESP module. Give it up. It's safer. And cheaper, too...
In conclusion, it can be done. But it is expensive. 200- 300 eur for the cluster, 150- 200 eur for the ESP module, around 100 for the misc parts (brake line, brackets, wires, connectors etc). Plus some serious cash for the man doing the swap
